My Best Pizza Sauce
This pizza sauce will beat any you get from the store and any you’ll have on a chain restaurant pizza. It is easy, robust, a little zesty, and comes together in about 20 minutes.

- 28 oz whole peeled tomatoes san marzano or similar
- 2 cloves garlic pressed or minced
- 20 grams olive oil
- 15 grams sugar
- 9 grams sea salt
- 0.4 grams dried oregano
- 0.3 grams red pepper flakes
Empty the 28 oz whole peeled tomatoes into a large bowl and squish them with your hands to break them up into very small pieces. Something about this process is very satisfying. Believe me. Set aside.
Measure your 15 grams sugar, 9 grams sea salt, 0.3 grams red pepper flakes and 0.4 grams dried oregano and set aside.
Add your 20 grams olive oil to a large pot over medium heat. Sautee the 2 cloves garlic until fragrant (about 30 seconds).
Dump your tomatoes, sugar, salt, oregano, and red pepper flakes in and combine.
Bring the pot to a simmer and simmer until reduced and thickened to your liking, about 15-20 minutes, stirring occassionally. Remove from the heat and allow to cool.
